Blattln mit Kraut (fried potatoe batter with sauerkraut)

For 4 people


Blattln (potatoe batter):

  • 1kg potatoes
  • 3 eggs
  • flour
  • salt, nutmeg


  • 500 g sauerkraut
  • butter
  • flour
  • juniper berries
  • garlic
  • salt


Peel the potatoes, cook them and mash them as long as they are still warm. When they have cooled down, add the eggs, flour (as necessary, according to the texture of the mashed potatoes), a pinch of salt and a bit of nutmeg, and mix it to get a smooth dough. Roll out thin and cut four-square pieces. Fry the Blattln in hot shortening until they are of a golden colour.

Briefly cook the sauerkraut with a bit of water and the juniper berries, then rinse it to get rid of the sourness. Heat some butter in a pan and add some flour to get a roux. Add the sauerkraut and simmer it. Add salt and garlic to taste.

TIP: Blattln are the best when you serve them right away.
