Pumpkins are typical for the time around Thanksgiving and can be prepared in many different ways: as a starter, soup or dessert.
INGREDIENTS for 4 people:
- 1/2 kg of pumpkin (Hokkaido)
- 1 onion
- 1-2 garlic cloves
- neutral oil or butter
- 600 ml vegetable or chicken stock
- salt, pepper, nutmeg (ginger)
- 150 ml cream
- pumpkin seed oil
- pumpkin seeds
Cut the onion and the garlic cloves into small pieces and roast them in oil/butter. Add the cubic-cut pumpkin, roast it shortly and add the stock. Season it with salt, pepper, nutmeg and, if you like, some ginger. Cook it until the pumpkin is soft. Then add the cream and puree the soup. Final seasoning.
Serve the soup in a soup plate, adding some pumpkin seed oil and some seeds.
