Grandma's Apple Strudel

for 5 people



  • 300g flour
  • 100g Butter
  • 1 egg
  • 1 pinch of salt
  • Approx. ½ l warm water


  • 1,3 kg apples
  • 200g buttered breadcrumbs
  • 60g cinnamon-crystal sugar
  • 100 g butter
  • 50g raisins
  • 1 Egg yellow


Crumble butter into the flour and add salt. Then make a well in the centre. Pour the egg and the water in the well and slowly mix it together to form a soft dough. Knead and stretch the dough until it is smooth and very pliable. Put the pastry into a glass bowl, cover and allow to rest at room temperature.

Roll out the dough and slowly pull and stretch it with your hands (stretched strudel dough) Put the dough onto a towel and stretch the edges equally to get the right shape and make it thin. Attention: the dough should be that thin that you might think it could tear any second. Spread half the amount of crumbles onto the stretched strudel and leave a boarder at the bottom edge. then spread sliced apples, the cinnamon sugar mixture and the left over crumbs. Now roll the strudel, using the towel to assist and place the roll onto a baking tray. Brush with the egg yellow and pierce it with a fork.

Bake the strudel for 20 minutes at 220 °C. Leave it in the oven for another 20 min at 200 °C to get it golden.

Serve with whipped cream and powdered sugar and maybe decorate with fresh apple slices
