Tyrolean Cheese Spatzln

For 5 people


  • 250g coarse flour
  • 1/4l milk
  • 2 eggs
  • 1 teaspoon salt
  • 50 g Butter
  • 200g grated cottage cheese
  • 80g onions
  • Some grated nutmeg
  • Pepper (freshly grounded)
  • Chive


Mix eggs together with milk, knead together with flour and salt to a medium solid dough. Extrude through a sieve with biggish holes into boiling salty water; As soon as the Spaetzle ascend to the surface, take them out, rinse in cold water and drain them.

Chop the onion thinly and fry in butter until golden. Add the Spaetzle Season with nutmeg and pepper, put lid on the pot and heat it up. Mix in the grated cottage cheese (the more aromatic the cheese the more intense the Spaetzle). After cheese melted, serve with chive and fried onion rings
