Grandma’s apple strudel
for 5 people
INGREDIENTS
Pastry
- 300g flour
- 100g Butter
- 1 egg
- 1 pinch of salt
- Approx. ½ l warm water
Fill
- 1,3 kg apples
- 200g buttered breadcrumbs
- 60g cinnamon-crystal sugar
- 100 g butter
- 50g raisins
- 1 Egg yellow
METHOD:
1. Crumble butter into the flour and add salt2. Make a well in the centre3. Pour the egg and the water in the well4. Slowly mix together to form a soft dough5. knead and stretch the dough until smooth and very pliable6. Put pastry into a glass bowl, cover and allow to rest at room temperature7. Roll out the dough and slowly pull and stretch it with your hands (stretched strudel dough)8. Put the dough onto a towel and stretch the edges equally to get the right shape and make it thin9. Attention: the dough should be that thin that you might think it could tear any second10. Spread half the amount of crumbles onto the stretched strudel and leave a boarder at the bottom edge.11. Spread sliced apples, the cinnamon sugar mixture and the left over crumbs12. Now roll the strudel, using the towel to assist and place the roll onto a baking tray13. Brush with the egg yellow and pierce it with a fork14. Bake for 20 minutes at 220 °C15. Leave it in the oven for another 20 min at 200 °C to get it golden.16. Serve with whipped cream and powdered sugar and maybe decorate with fresh apple slices
